As I type I am shoveling in the last bite of this delicious salad my husband has made for our lunches this week.
A mixture of tomatoes, black olives, feta, red pepper, cucumber, green onion, parsley and quinoa. The quinoa makes for a unique take on the traditional greek salad. As does the olive oil and balsamic that brings everything together. It's so refreshing I'm glad the bowl for the week is nowhere near me right now. Yumm!
