Butternut Squash and Leek Soup, and Curried Cauliflower Soup
My husband made the best soups this past week. I'd been eating them every day at work. I finally finished off the cauliflower one today. But we still have some squash left for this week! Can't get bored of good soup – it's just impossible. They're so tasty and warm you inside and out!

What a great coincidence! My boss in TO is asking me for a butternut squash recipe :-) If you have time I would love to have your recipe.

From my husband:
i cut a butternut squash in half and roasted it. i cut 4 big leeks and boiled them in about 3 cups of chicken (or veg) stock and 1 cup of water. i also added some caraway seeds, some fresh thyme sprigs, two cloves of garlic and a pinch of cayenne. then cube the squash and add it to the stock and lightly boiled everything for an hour or more. then i blended everything.
