The Bell Inn Biscuits


About a year ago I did a post about The Bell Inn in Dorchester, NB. One of their specialties is their biscuits. Tonight my husband was preparing some dishes for the arrival of our company tomorrow. Pre-made lasagna, quiche, celery root and cèpe soup with yummy biscuits (the actual recipe from The Bell Inn!). The house smelled phenomenal. Stay tuned for recipes on those fantastic dishes.

During the Christmas of 2007, my husband received a cookbook from his aunt. This book was filled with recipes that his grandmother used to make on a regular basis. And, since they're related to the owner of The Bell Inn, I guess it only makes sense that they would be given the recipe to their marvelous biscuits. It was one of his grandmother's favourite recipes.

What you’ll need
3 cups flour
1/2 t salt
3 t cream of tartar
1 t soda
1 1/2 t baking powder
1 T sugar
1 cup shortening
1 egg and enough milk to make 1 1/3 cups

What to do
Bake at 400 degrees for 15-20 minutes.

Heaven. And the perfect side to your favourite soup.

They look delish! I have never made biscuits before. I guess you would mix all dry ingredients together first then add the wet..? How do you cook them, in a muffin tin?

My husband had never made these before but he said they're super easy...

mix the dry, add the wet and use the gradmother method - clean hands
to work the wet with the dry ingredients. dont' overwork it htough -
just mix it until it's moist and then gently fold it over rather than
knead. then roll it out at about an inch thick and use round pastry
cutter (or a glass, like he did - but a cutter would be better).

OMG! I made these yesterday for the first time in years. I remember Nana using marjarine, not shortening. However, I used the shortening and just one cup of the egg and milk mixture which was certainly enough liquid. They were the best biscuits I have EVER made. Light, flaky and delicious. Your photo inspired me to give them a try again after all these years. Thanks for inspiring me to be more daring and creative in all my cooking!
