Broiled Salmon with Beets and Quinoa
Sometimes the most simple meals are the most delicious. Tonight my husband made a lovely plate of lightly breaded salmon, beets and quinoa. He first coated the salmon with Dijon, added the bread crumbs and then fried the fish for a few seconds before finally finishing it off under the broiler. The quinoa was mixed with fresh parsley, olive oil, ground cumin, lemon and lime juice.
